A few fans, such as ToshiroAkiraOzu, have shared info on Reddit about finding new stock at local stores, usually Best Buys at this point.

Another Redditor by the name of HBlakeH reported that the Best Buy he works at received a new shipment of about 15 Gamecube Adapters for Wii U. Of course, they were sold through very shortly after, but the fact that more are being produced and shipped is good news for those still looking desperately for one of the highly sought after devices.
There hasn’t been word on any restocks for other stores just yet, but if Best Buy is receiving them then they should follow soon. Keep checking all of your local stores to see if they get a new shipment, and if they do then be sure to pick them up fast. Despite the new supplies it seems like Nintendo still hasn’t come close to fully meeting the demand for the Gamecube Adapter for Wii U.
Of course, there are other options if you still have trouble finding one. Play Asia has a few third-party adapters that perform a similar function. They might not work exactly the same, and you might lose some features in the process, but at least you’ll be able to get your Smash on with your favorite controller.
